Low-lactose Vanilla (Coconut) Ice Cream
1 1/2 c heavy whipping cream
1/2 c lactose-free milk
1/2 c sugar
1 t vanilla
(1/2 c sweetened coconut flakes)
Combine all ingredients, stirring until sugar is completely dissolved. Fill cylinder of ice cream maker no more than two-thirds full then freeze according to manufacturer’s directions. Serve immediately.
