Chili Garlic Noodles

This makes about three servings. Scale ingredients up for more.

6 ounces rice noodles
1 head broccoli, cut in 1/2-1 inch pieces, with the stems peeled, or another veggie of choice
9 raw shrimp, cut in 1 inch pieces, veins and shells discarded, or another protein of choice
1/2 c frozen corn, or another veggie of choice
4-5 T vegetable oil
3 green onions, diced and divided
1 jalapeno, diced with seeds and membrane discarded
4-7 gloves garlic, minced
1 T fresh grated ginger
3 T sesame seeds
2-3 T low sodium soy sauce, to taste
1 T rice vinegar
1 T brown sugar
1-2 T chili oil, to taste
1/2 T sesame oil

Put an 8 quart pot, almost full of water, on to boil. Put the vegetable oil in a large sauté pan and heat over medium-high heat. When the oil just starts to shimmer, add the white and light green parts of the onions (reserve the deep green parts for later) and the jalapeno and fry until the edges of the onion start to crisp and turn brown. Add the garlic and fry a minute more, then add the ginger and sesame seeds. Stir and let fry for one more minute, then remove from heat. Add the sesame oil, chili oil, soy sauce, vinegar and brown sugar. Stir to combine.

When the water boils, add the shrimp, then the broccoli and corn one minute later, and then when it returns to a boil, add the rice noodles. When all the food in the boiling water is cooked (follow cooking directions for the noodles), drain it well and add to the sauté pan. Stir to combine with he the chili garlic mixture, sprinkle with the reserved green onions, and serve immediately.

In a 500° F oven, braise 3- 5 pounds boney lamb or veal (neck bones, ribs, shin) meat for 15 minutes. Place meat in a deep pan and cover with water. Add onion, 2 T dry dill weed, and black pepper. Simmer until meat is falling off the bone.

Cool over a few hours and remove fat. Separate meat from bones. Strain broth. Add meat to broth reserving about a cup of liquid. Bring broth to a boil. Mix 1/2 c sugar, 1/2 c vinegar, salt to taste, and additional dill weed into reserved liquid. Stir reserved liquid into broth.

Serve over diced, boiled potatoes. It’s best after having been cooled overnight and reheated.

Amy’s Dal

1 ½ c Indian red lentils (masoor dal)
¾ t garam masala
¾ t hing (asafetida)
1 T turmeric
1 t ground coriander
8 c water (may use chicken broth or add chicken or vegetable bullion)

2 T oil
2 T butter
4-6 cloves garlic, finely chopped
1 inch fresh ginger, finely chopped
1 small or ½ large onion, finely chopped
1 stalk celery, finely chopped
1 tomato, finely chopped

2 T lemon juice
salt to taste

¼ c cream

3 T oil
1 chile japone, with seeds discarded, cut in small ribbons
1 t black mustard seeds
1/2 t whole cumin seeds

chopped cilantro

Combine first 6 ingredients in a pot and boil until lentils are soft.

Meanwhile, add next 7 ingredients to hot skillet and stir occasionally until celery is soft. Combine with previous mixture.

Add lemon juice and simmer 10-15 min. Salt to taste.

Remove from heat and add 1/4 c cream.

Heat the 3 T oil until shimmering and have a splatter screen handy. Add the chile japone, then the cumin seeds and finally the black mustard seeds. Cover immediately and temper the spices for 15-20 seconds, then remove from heat. Once it cools for a minute or two, scrape oil, chile and seeds into a small dish for serving.

Each person can garnish their own bowls of dal with the oil-tempered spices and cilantro. Serve with naan or rice.

Spaghetti Sauce

1 bell pepper, diced
1 onion, diced
1 15 oz can of diced tomatoes
1 30 oz can of pasta sauce
1/4 lb ground turkey
1 Italian sausage, skinned
1 t basil
dash of oregano
pepper
dash of garlic powder
oil

Fry the diced onion and bell pepper in oil until soft. Add meat and fry until browned. Add remaining ingredients and simmer 15 minutes. Eat over whole grain spaghetti with Parmesan cheese or sour cream and sides of green salad and steamed zucchini.

Chickpeas

For 3 c cooked chickpeas as ingredient: 1 c dried chickpeas, 1/2 t salt, 1 T oil, 3+3 c water

For 4.5 c cooked as ingredient: 1.5 c dried chickpeas, 3/4 T salt, 1 T oil, 5 + 5 c water

For 3 c chickpeas as side dish: 1 c dried, 3 + 3 c water, 1 T salted butter, 1/2 t salt, 1/8 t garlic powder, 1 bay leaf

Add plenty of water to chickpeas, bring to a boil, turn off heat and let soak for an hour. Drain. Add remaining ingredients and simmer until tender.

INSTANT POT:

Either soak the chickpeas overnight and cook for 15 minutes in 2.5 c water, or just rinse without soaking and cook for 45 min in 3 c water. Natural release.

Texas Caviar

3 c cooked (or cook 1 c) black-eye peas (or substitute 1/2 with red beans)
1 c cooked corn
1/2 onion, diced
1 green bell pepper, diced
1 c diced tomatoes

1/3 c red wine or rice vinegar
1/3 c olive oil
1/2 t salt
1/2 t black pepper
1/2 t garlic powder

1 c chopped cilantro
1 avocado, chopped

Combine first 10 ingredients. Refrigerate for 2+ hrs. Add cilantro and avocado. Serve with chips or crusty bread.

Best Basmati Rice

2 c white basmati rice
3 1/3 c water
2 T butter
1/2 t salt

Rinse rice in cold water until water runs clear. Drain.
OPTIONAL: Melt butter in pan over moderate heat, add rice, stirring for 2 min.
Add remaining ingredients, bring to boil, cover and cook over lowest heat until water is absorbed (about 20 min). Remove from heat and let sit for 5 min before fluffing with a fork.

To refresh old rice, place in a colander, covered with a damp paper towel, over boiling water for 5 to 10 minutes or heat with 3-4 T water in microwave.

Serves 8.

Stan’s Simple Stir Fry

1/2 onion, chopped
1 stalk celery, chopped
1 head broccoli, chopped
1/2 lb chicken, chopped
toasted sesame seed oil
olive oil
3 T corn starch
salt and pepper

Add plenty of vegetable oil and a little sesame seed oil to a hot pan. Add onions and celery and stir for a minute, then add chicken and stir for another minute, add salt and pepper, chicken, 1 cup water, and broccoli. When the broccoli begins to soften, mix cornstarch in 1 cup cold water and add to pan, stir.

Eat with rice.

Amy’s Easy Mild Posole

5 dried New Mexico chiles, seeds and stems removed
3 ancho chiles (= El Guapo “pasillo” chiles), seeds and stems removed
1 med onion, diced
4-6 cloves garlic, pressed
1-1.5 c cooked chicken
4 c chicken broth
1 28 oz can hominy, drained
1 T oil

Toppings: cilantro, avocado, sour cream

Pour 2 c boiling water over chiles and let sit for 20-30 min. Saute onion and garlic in oil in a pot. Add chicken broth, hominy, chicken. Puree the chiles and water mixture in a blender, then strain over the pot and discard the solids. Salt to taste.

Chicken Makhani (Indian Butter Chicken)

Add to sauce pan:

oil
1 onion, chopped

Saute until translucent. Add:

4 T butter (1/2 cube)
Juice of a lemon
4 cloves garlic
1.5 inch fresh ginger, finely chopped
3 t garam masala
2 t chili powder
3 t cumin
3 bay leaves

Cook, stirring, for 1 minute. Add:

2 cans blended diced tomatos

Cook, stirring, for 2 minutes. Add:

1 c cream
1 c yogurt
¼ t salt

Stir, then simmer 10 min.

In a separate sauce pan, combine:

oil
2.0 lb chicken
2 t garam masala

Cook until lightly browned. Add sauce, reduce heat and simmer 10 min.

Mix together the following then stir into sauce and cook until thickened (5-10 min):

3 T cornstarch
water to make it liquidy (~1/2 c)

Serves 9.

Palak Chicken

2 chicken breasts, cooked, chopped.
1 lb fresh or frozen spinach
1/2 medium onion
1 small can mild chilis
1/2 c yogurt
1/2 c cream
1/2 t salt
2 T oil
spices (e.g. 1 T Indian spice mix & 1/4 t cloves, or 1/2 t nutmet, 1 t cumin, 1 t coriander, cinammon, bay leaf, garlic, etc.)

Boil spinach in a little water. Dice and fry onion in oil until browned. Combine spinach, onion, chilis and blend. Add to saucepan with remaining ingredients and simmer for 15 min. Serve with basmati rice and fruit salad or mango lassi.

veg/beef base (or 1/4 t more salt)
Soak lentils for an hour (in hot water) to overnight. Rinse and drain. Dice tomato and onion, then fry with celery and carrot in oil with cumin and salt until soft. Add lentils, water, and beef bullion. Bring to boil and simmer until lentils are tender (about 40 minutes or more). Serve over rice with fried eggs, fried ripe plantain, and fresh tomato slices.Makes 7 servings.

Irish Potato Pie

6-8 potatoes, peeled

6 bacon strips

3-4 leeks

salt

pepper

one cup grated Cheddar cheese

Cook the potatoes in boiling water until tender. Drain. In skillet, fry bacon until crisp and drain on paper towels. Trim leeks so that you have the white part and a small amount of green. Wash well, and slice thin. Add leeks to pan, and sauté over medium heat until soft. Slice the boiled potatoes, and arrange half in the bottom of a pie plate. Season with salt and pepper. Layer with bacon, leeks and one half of the cheese. Cover with remaining with remaining potatoes and season again. Sprinkle with remaining cheese. Bake at 400 degrees for 30 minutes until top is browned and cheese is melted. Makes 6 servings.

German Pancake with Buttermilk Sauce

Pancake:

3 T butter (salted)
7 eggs
1/4 c cream (or use 1 1/2 c milk, no water, and 4 T butter)
1 1/4 c warm water
1 1/2 c flour
1/4 t salt

Melt butter in a large (12″ cast iron skillet) in an oven preheating to 375 degrees. Mix eggs, flour, and milk and pour into the sizzling butter. Bake for 30-40 minutes until golden brown. Serve at once under jam, crushed canned peaches, powdered sugar with lemon juice, applesauce with dash of cinnamon, or fresh strawberries with whipped cream.

[ if center doesn’t puff, try heating middle on stove over low flame for a minute or 2]

Prior recipe (Large – 9×12 + 8×8: 8 eggs, 2 c milk, 2 c flour, 8 T butter; Small – 9×13: 6 eggs, 1 c milk, 1 c flour, 2 T butter)

Sauce:

1 1/2 cups white sugar
3/4 cup buttermilk
1/2 cup butter
2 tablespoons light corn syrup
1 teaspoon baking soda
2 teaspoons vanilla extract

In a small saucepan, combine sugar, buttermilk, butter, corn syrup, baking soda; boil for 7 minutes. Remove from heat and stir in vanilla. Spoon over slices of pancake.

Spanish Rice

small roma tomato, diced
jalapeno or 1/2 bell, seeded/de-veined

water (total of 3 c liquid)
tomato sauce (or 1/4 c water, 1/4 c paste)
OPTIONAL INGREDIENTS:
paprika or chili powder
cubed chicken
juice of small lime
finely chopped cilantro
Heat oil in a large saucepan over medium heat. When hot, add rice and stir constantly about 5 minutes until the rice begins to lightly brown. Add vegetables and spices and stir 2 more minutes. Add water and sauce, bring to a boil, then reduce heat to low, cover with a tight lid, and simmer 20-25 min until the water is gone. Stir in lime juice and cilantro. Remove from heat and let sit for 5 min, covered. Serves 8.
